綠豆沙

我煮綠豆沙就像瞎子摸象,因為我不喜歡吃豆,成世人吃綠豆沙次數一隻手數得晒。不過聽聞綠豆沙清熱,所以煮來試試看。綠豆沙非常容易弄,只不過要好多時間。綠豆二百克洗淨用水先浸數小時,然後用八碗水煲滾(有人建議在綠豆殼浮起時撈走,不過豆殼全撈走便沒有綠豆香,所以悉隨尊便),下一兩塊陳皮(亦可加臭草或海帶),中火煲三小時,要不時攪拌免黐底。最後斟量加入冰糖片糖,用半茶匙鹽調味。你問我唔食綠豆沙又點知整出嚟好唔好食?因為我有一個自稱最愛綠豆沙的肥仔幫我試味囉。

QUESTION...點解要又冰糖又片糖?

因為冰糖同片糖provide唔同既甜味,落兩種可以增加味道層次.同埋片糖(較香濃)俾到少少色.
