煎藕夾

這碟藕夾又是從阿蘇節目學回來的。半肥瘦豬肉剁碎,用糖、生抽、胡椒粉、生粉、水各少許醃好攪至起膠。蓮藕去皮切薄片(平日切片來炒瘦肉或煲湯就切得多,要切到靚一靚片片均勻對我來講也有點壓力)。蔥整條切粒,我自創另加已浸軟蝦乾兩三舊剁至極碎(我的邏輯是:既然蓮藕餅也會加蝦米,藕夾也可以呀)拌勻入肉碎中。將肉碎釀在藕片上,再用另一塊藕片夾穩,像夾三明治般。藕夾輕輕上一層生粉,中小火反覆煎至內裡豬肉及藕片熟透約十分鐘,盛起。臨吃前再用中大火煎一次,務求藕夾金香脆口。
