煎薯仔餅

薯仔三隻去皮洗淨用刨刨絲,隔走水份備用。浸軟冬菇兩隻與臘腸切幼粒,浸軟蝦米數粒切碎,瘦肉剁碎後用生粉、糖、鹽略醃(瘦肉可省去)。先後下鑊爆香臘腸、蝦米、冬菇及瘦肉,盛起倒入薯仔絲裡,下蔥粒及少許鹽、胡椒粉及生粉(要較硬的可加入麵粉)拌勻。薯餅混合物先用湯匙拿起一小撮,再用手榨走剩餘水份,搓成球狀,燒滾油後放入鑊,轉中火煎香一面,輕輕用鑊鏟按扁,再反過來煎另一面。時間許可大火翻煎一次即成。

又是吃到一半梁生提起才記得要拍照。我用了兩種薯仔(剩餘物資要盡快吃光),不知對味道有否大影響?
