雜菌扒玉子豆腐


個多兩個月沒有入廚房,餓自己的菜餓得緊要,在腦海盤算怎樣把想吃的全部加起來。湯實在沒有時間煮,不如弄個粟米湯,但這樣便不能煮最愛的粟米玉子豆腐,那不如做個雜菌扒,但其他三道菜也沒綠葉,不如加些荷蘭豆,最後的完成品便是這個雜菌扒玉子豆腐。

玉子豆腐切塊沾薄薄一層生粉,放入熱油中火炸煎香兩面,盛起放在廚房紙上吸油。荷蘭豆搣去上下蒂後,放入加有少許鹽及油的熱水汆水一分鐘,隔水後用冷水喉水沖(才脆身),待用。蒜泥及一片薑下鑊爆香,倒入洗淨的雜菌,炒至金黃後,玉子豆腐及荷蘭豆回鑊,加少許鹽調味,最後打個蠔油芡即成。
